Try adding 1 tbsp nutritional yeast and you get a perfect vegan cheese sauce
Ingredients
| Fresh Riped tomato | 1 kg |
| Chopped Onion | 1 onion |
| Chopped Garlic | 4 – 5 petals |
| corn flour | 1 tbsp |
| Chili flakes | ½ tsp |
| Oregano dry | ¼ tsp |
| Oil | 2 tbsp (enough to sauté onion ) |
Blanch tomatoes for 20 seconds
Peel of the skin and chop the tomatoes finely
In a pan add oil and Sauté onion, garlic, chili flakes and dry oregano for about 3 to 4 mins
Add the peeled and chopped tomatoes and cook for 20 to 30 mins or till cooked
Add Salt to Taste
(You can add more tomato puree to thicken or add more tomato juice thin down the sauce)
If you need to make it for kids you can avoid adding paprika
Choice of tomatoes decides the quality of sauce so choose wisely and nothing can match the taste of freshly made tomato sauce.
STEP TWO : Vegan Paprika Crème (vegan, gluten-free white sauce)
Try adding 1 tbsp nutritional yeast and you get a perfect vegan cheese sauce
Ingredients
| Coconut milk | 300 ml |
| Chopped Onion | ½ onion |
| Chopped Garlic | 4 – 5 petals |
| corn flour | 1 tbsp |
| Chili flakes | ½ tsp |
| Oregano dry | ¼ tsp |
| Oil | 2 tbsp (enough to sauté onion ) |
In a pan add oil and Sauté onion, garlic, chili flakes and dry oregano for about 3 to 4 mins
Make coconut milk add the corn flour to it
(You can choose to extract fresh from coconut or readymade one, I have used the coconut milk powder so can adjust the consistency as required)
Add coconut milk and cook for more 5 to 7 mins or till the sauce is thickened
Add Salt to Taste
If you need to make it for kids you can avoid adding paprika Your vegan gluten free white sauce is ready if you add vegan cheese to it makes a great mac n cheese.
STEP THREE : Vegan nut free coriander pesto (Same applies for the regular pesto use basil instead of coriander)
Ingredients
| Coriander | 200 gm |
| Chopped Garlic | 4 – 5 petals |
| Melon seeds | 2 tbsp |
| Chili green | 2 no. |
| Salt | to taste |
| Oil | 1 tbsp (enough to sauté onion ) |
Equipment’s required : sauce pan, ladle, whisk, gas range, Knife & chopping board
In a pan add very little oil and Sauté coriander and chili for a couple of mins
Add all ingredients to a mixer grinder to make a fine paste
add Salt to Taste
Your coriander pesto is ready
Its gluten free, nut free, vegan, low fat, Can be used to coat pasta or as a dressing or dipping sauce and many other ways to use as a regular pesto
STEP FOUR : Gluten free Red Quinoa Pasta with spicy tomato sauce, vegan paprika crème and nut free coriander pesto drizzle
Ingredients
| tomato sauce | 1 cup |
| vegan white sauce | 1 cup |
| coriander pesto | 2 tbsp |
| vegan cheese | 1 tbsp |
| Chili flakes | ½ tsp |
| Oregano dry | ¼ tsp |
| Oil | 1 tsp |
Blanch pasta for 6 to 7mins in boiling water
Strain and sprinkle some oil and oregano
In a serving plate spread some tomato sauce
Place the boiled pasta on tomato sauce
Pour a ladle full of vegan paprika crème sauce
Drizzle some coriander pesto and grate some vegan cheese on top
Serve hot
